Japanese restaurant ShinBay now open in Scottsdale, omakase only

Now ShinBay is back yet again in a 4,000-square-foot building on the southwest corner of Scottsdale Road and Second Street in Old Town Scottsdale.

There is a stage of the long-term waiting game — beyond anticipation, impatience, frustration, dread and resignation — when the object of your affection starts to drift to the edge of consciousness and a reminder is more likely to be greeted with “Oh, yeah, whatever happened to that?”

If not for the physical evidence  — a new building on the southwest corner of Scottsdale Road and Second Street on the southern edge of downtown Scottsdale — it would have been easy to assume Hyunwook Lee’s collaboration with Shinji Kurita had died a quiet death. Another project that never quite got off the ground.

So it should come as a delight and relief that I can finally say this: ShinBay is back.
