Everything from xiao long baos to savory bowls of pho and crispy pork lumpia can be found at Mekong Plaza in west Mesa, which will expand its food offerings even larger by the end of the year.
A 35,000-square-foot expansion adjacent to the exiting plaza on Dobson Road is now expected to debut in four months. The initial anticipated opening of the $10-million Mekong 88 was July 2023, which was then pushed back to this summer. The project broke ground in July 2022.
“We’re hoping for an opening before the new year — December,” said Drew Burtoni, development manager for Mekong Real Estate Investment Group. “That’s the plan. As I’ve learned in construction there’re always hiccups and delays.”
According to Burtoni, tenants have already signed leases, including one that could be considered the crown jewel — Haidilao Hot Pot.
“The big one is Haidilao,” Burtoni said. “That is an 8,500-square-foot Asian hot pot, world-renown. They pop up usually in high-end malls and places.”
