While convenience stores are having a moment that’s spurred by the Covid-19 pandemic, a group in Gilbert is trying to ride that wave but also introduce something never tried before in the Valley market.
The partnership behind the project, which is half made up of restaurateurs and other half of gas station owners, has already created a lot of buzz because they are not trying to open a traditional or even a bodega-style convenience store, but rather create something very Arizona-, or even more specifically, Gilbert-centric.
